Holiday parties are in full force right now and if you are looking for a fast and easy take-along for that next gathering, I have three options for you below:
Cranberry-Orange Coconut Treats
I love to take ½ a cup of coconut oil and a ½ cup of coconut butter and then mix in whatever floats your boat. To make these a little m ore festive for the holidays I added in cranberry and orange.
Ingredients:
½ cup coconut oil (melted)
½ cup coconut butter (melted)
¼ cup chopped cranberries
¼ cup chopped walnuts
1 t grated orange zest
Melt the coconut oil and coconut butter together, then gently mix in cranberries, walnuts and orange zest.
Place candy wrappers in a mini-muffin tin (or can just do in a baking pan lined with parchment paper) and place two teaspoons of mixture into each wrapper.
Freeze for about 20 minutes. Store in fridge.
Nut Butter Treats
These are so popular in my house that this was the last coveted one before my son ate this one too.
Base Ingredients:
½ cup nut butter (I used sunflower seed butter)
½ cup Kerrygold butter
½ cup coconut butter
Additions:
Nuts
Coconut Flakes
Chia Seeds
Vitamin/Green powder
Cinnamon/Ginger
How to:
Soften butter and melt coconut butter.
Blend all butters in a food processor.
Add in additions for texture and flavor.
In a lined mini-muffin tin, place two teaspoons per serving.
Freeze for 20-30 minutes. Store in fridge.

Pecan-Date Bites
These were brought to a nutrition workshop weekend a few years ago by a fellow NTP and they were a huge hit. I have since taken these to a cookie exchange for the past 3 years and they continue to be a hit! They are so simple.
Ingredients:
Dates
Pecans
Coconut-Ghee
Sea Salt
How to:
Split dates in half.
Spoon coconut ghee into each half.
Place a pecan in coconut ghee.
Sprinkle with sea salt.
Done. (Best if stored in fridge)
